Chef Chevalier Yau is the head chef of æra in Hong Kong. Leading one of the youngest fine-dining teams in the city, he has brought the rigorous philosophy of New Nordic Cuisine to Hong Kong by emphasising hyper-seasonal local produce, traditional Nordic preservation techniques (fermentation, smoking, pickling, air-drying), and near-zero waste.
