Set to open on May 29, Estuary by Vicky Cheng marks the highly anticipated debut of celebrated Hong Kong star chef Vicky Cheng (鄭永麒) at Galaxy Macau. Fresh from winning the prestigious Black Pearl Restaurant Guide 2026 Chef Honor Award and securing No. 2 on Asia’s 50 Best Restaurants 2026, Cheng presents his first signature French restaurant in Macau — a refined celebration of flavor, balance, and nourishment.

Where River Meets Sea
The name “Estuary” draws inspiration from the dynamic meeting point of freshwater and seawater — a fertile zone of transformation and abundance. This philosophy flows through the menu, where premium seafood takes center stage. Dishes are elevated with clarified broths, delicate aspics, fermentation techniques, charcoal grilling, and essential oil infusions, creating layers of clarity, depth, and vitality.

Cheng masterfully fuses classical French techniques with over 15 years of Asian culinary experience. The result is a cuisine that feels both deeply rooted and refreshingly contemporary — precise, intentional, and driven by exceptional seasonal ingredients.
An Immersive Fine Dining Journey
From the moment guests arrive, Estuary offers a full sensory experience reminiscent of grand Parisian hotels. Expect ritualistic service including:

The seasonal tasting menu showcases Cheng’s signature style: clean, focused flavors with surprising texture contrasts and refined fermentation notes. Striking Design
Designed by J Candice, the interior embodies the theme of tidal transformation. Guests pass through artist Martin Gallo’s dynamic Splash sculpture and grand 5.7-meter ash wood doors into a New Art-style dining room crowned with a magnificent dome. The highlight is a striking Molteni 1923 open kitchen, where culinary craftsmanship unfolds live. Private dining rooms feature Lasvit sculptural lighting that casts gentle, wave-like shadows, completing the immersive journey.
